Remember those weekends when you use to wake up every Monday morning in fresh and energetic mood. There was no sign of laziness that morning and you just felt wonderful and re-creational. The feeling was exciting that it is actually Monday morning, isn’t it? It is because of the soup i.e. Sausage Tortellini Soup that I am going to teach you today. But before that let me tell you the story that made me explore this lip-smacking dish. I was on a holiday at Costa Rica with my family and after coming back from there, I was actually excited to catch up my work and of course, my mail inbox that weekend.
I catch up with my friends over chips and some of my favourite dishes like margaritas and salsa etc. And it was truly amazing and tempting to have them with friends and that too on the weekend. I was all set to enjoy the weekend by chilling on my couch with shining sun to a picnic in the park to everything I love. And you know what one of my friends suggested having sausage tortellini soup. At first, I was like NOOO what that is. But he insisted so I agreed. And I felt in love with this delicious soup when I had the first sip of it. Then I explored the recipe of this soup to make it at home as I cannot go outside every time to have it. Here are the steps to make sausage tortellini soup in less than 30 minutes:
Tortellini Soup With Italian Sausage
It takes 20 minutes to cook and 5 minutes to prepare things. Here are the ingredients:
- Hot Italian sausage (1 pound ground)
- 1 cup onion diced
- 28 ounce crushed tomatoes – fire roasted
- 1 tbsp. of olive oil
- 5 garlic cloves (minced)
- 1 tsp salt
- 6 cups stock either vegetable or chicken
- ½ tsp pepper black
- ¼ cup basil leaves chopped roughly
- 2 cups baby spinach fresh packed
- 1 pound tortellini (frozen)
- Parmesan cheese grated
How to Prepare Soup?
Take a large pot and cook Italian sausage in it. Keep the flame medium-high and cook until it gets brown. Stir it and break the sausage while cooking. Take out the sausage in another plate by draining off the grease and keep it aside. Put the pot again on heat and put olive oil in it. Add onions, sauté for 5-6 minutes. Stir it until the onions get soft and then add minced garlic. Cook for another 1 minute. Put tomatoes, salt, pepper, stock, basil leaves and Italian sausage that you kept aside. Mix all the ingredients well and cook until it reaches a simmer. Now put baby spinach and tortellini and cook it until it simmers. Keep adjusting the flame if it starts boiling while stirring in between.
Your sausage tortellini soup is ready to have. Add salt and pepper if needed. Garnish with parmesan cheese and serve warm. YUMMY!!!!!!!!!!!!!!!!
